Day in the Life our Storytellers..
You walk in. Lights low. Music right. The room feels like it’s about to pop.
Pre-shift — Set the tone
You’re not just “clocking in.” You’re locking in. You check the floor plan, review notes, taste
something if needed, and get eyes on the menu features. You’re ready to speak to Levantine
flavors with confidence — bright herbs, warm spice, char, citrus, and shareable pacing.
First tables — Hospitality starts before the greeting
You notice what guests need before they ask. Water hits fast. Warm welcome. Clean, confident intro. You read the table: business dinner, date night, celebration, friends out for cocktails.
Different energy, same standard.
Order time — Guide, don’t push
Guests ask, “What should we get?” and you actually help.
You explain spice levels, allergens, and favorites. You pace the experience: mezze first, mains
when they’re ready, cocktails that complement, wine that makes sense. You make it feel effortless — like the meal just happens perfectly.
Peak rush — Controlled chaos (and you stay in control)
You’re moving fast: refills, resets, coursing, pre-bussing, running food, check-ins.
You communicate like a pro — clear call-outs, allergy notes, timing. You don’t disappear. You
don’t panic. You don’t let your section fall apart. You keep the vibe right even when the floor is full.
Guest recovery — Grace under pressure
A dish isn’t right or timing slips. You don’t make excuses.
You fix it with calm confidence, loop in the manager when needed, and keep the guest feeling taken care of. The goal isn’t perfection — it’s trust.
Team moments — You’re not just a solo act
You run drinks for someone who’s buried. You pre-bus a neighbor’s table. You help reset. You communicate with the bar and kitchen respectfully. Ala DC works because we move together.
Close — Finish strong
You don’t “fade.” You close your section clean: side work done right, tables reset, checks handled accurately, and the dining room left ready for the next day. You leave tired — but proud.
