Essential Duties & Responsibilities
The Captain plays a critical role in delivering an exceptional dining experience while maintaining the highest standards of service, professionalism, and team collaboration.
Responsibilities include:
- Maintain full knowledge of service standards, menu offerings, and beverage programs
- Present and explain menus with confidence and precision
- Provide personalized food and beverage recommendations tailored to guest preferences
- Execute full wine service and tableside preparations when applicable
- Establish and maintain positive guest relationships to ensure a memorable experience
- Maintain constant communication with team members to ensure seamless service
- Assist team members with daily responsibilities to support overall operations
- Conduct dining room inspections to uphold cleanliness and presentation standards
- Follow all cash-handling and reporting procedures accurately
- Complete all opening, side work, handover, and closing duties as required
- Communicate guest preferences and feedback effectively to management and team members
- Maintain expert-level knowledge of all menu items, ingredients, and preparation methods
- Uphold all front-of-house service standards and steps of service
- Support a positive, professional, and team-oriented work environment
- Perform additional duties as directed by management

Benefits include:
- Fabio Trabocchi Restaurants offers full-time employees company-subsidized health insurance. A full-time employee must work an average of 30 hours per week to qualify for health insurance benefits. Coverage begins on the first day of the month following the employee’s 60th day of employment. The insurance enrollment period is between 30 and 90 days of employment.

Qualifications
Ideal candidates will possess a passion for hospitality, strong service skills, and a commitment to excellence.
Requirements include:
- Minimum 3 years of front-of-house experience in fine dining or upscale casual restaurants (captain experience preferred)
- High-volume experience strongly preferred
- Strong knowledge of food, wine, and service standards
- Exceptional communication and guest engagement skills
- Professional appearance and demeanor consistent with fine dining standards
- Experience with Italian or Spanish cuisine is a plus
- Ability to maintain composure in a fast-paced, high-pressure environment
- Strong attention to detail and organizational skills
- Commitment to teamwork, professionalism, and continuous learning
- Must be at least 18 years of age
- Must be able to communicate in and understand English
- Ability to stand for extended periods of time and lift as needed
