Summary/Objective
The Assistant Kitchen Manager will play a key role in handling the day-to day back of house operations and assisting in the management of the back of house team members. They will assist in hiring and training back of house team members. They will ensure that all employees are complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. This position is also responsible for preparing and/or directing the preparation of food to be served. The Assistant Kitchen Manager is responsible for ensuring appropriate use of facility supplies and equipment to minimize loss, waste and fraud. Assists in ordering supplies and keeping records and accounts up to date.
Essential Functions
1. Assists in hiring and training back of house team members.
- Prepares or directs preparation of food served using established production procedures and systems.
- Determines amount and type of food and supplies required using production systems.
- Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
- Sets steam table; serves or ensures proper serving of food for tray line or dining room.
- Complies with established sanitation standards, personal hygiene and health standards. Observes proper food preparation and handling techniques.
- Stores food properly and safely, marking the date and item.
- Reports necessary equipment repair and maintenance to kitchen manager or places a service request for repairs.
- Correctly prepares and ensures team members prepare all food served following standard recipes and special diet orders.
- Plans food production to coordinate with meal serving hours so that excellence, quality, temperature and appearance of food are preserved.
- Apportions food for serving.
- Maintains daily production records.
- Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
- Completes food temperature checks before service.
- Completes all required opening and closing checklists, or any other required checklists using the appropriate software.

Supervisory Responsibility
The Assistant Kitchen Manager serves as a back-up to the Kitchen Manager in supervising employees.
Work Environment
This job operates in the kitchen and may be working in close proximity to co-workers. The noise level in the work environment can be loud. Hazards may include, but are not limited to, cuts, burns, slipping and tripping.
Physical Demands
The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.
- Walk and stand during entire shift.
- Continuously reach, bend, lift, carry, stoop and wipe.
- Remain stationary for long periods of time.
- Frequently wash hands.
- Be able to lift up to 45 lbs.
- Be able to manipulate fingers, hands and arms to cut, measure, pour, serve, carry and wipe.
Position Type/Expected Hours of Work
This position is hourly and may require long hours and frequent weekend work, qualifies for benefits and time off.
Travel
No travel is expected for this position.
Required Education and Experience
- High School Diploma.
- ServSafe food safety certification required.
- Chef or cook training or previous experience as a chef or cook.
- Restaurant experience or more education is generally preferred.
- Communication and interpersonal skills.
- Ability to diffuse tense situations and resolve conflicts.
- Willingness to work during peak hours, including nights, weekends, and holidays.
- Ability to walk, stand, and occasionally carry heavy items in a fast-paced, stressful environment.
Additional Eligibility Qualifications
- Must be eligible for and maintain SIDA badge required to work in airport.
- Must maintain an applicable state health and/or alcohol compliance card.
Work Authorization
Must be legally authorized to work in the United States.
