Opening Baker Duties
- Pre-shift inspection: Note any issues from previous night's close
- Production: Complete all daily pastries including:
- Croissants and specialty croissants
- Drop biscuits (mix fresh)
- Cookie balls (bake off)
- Muffins and scones
- Brioche donuts (fry fresh)
- Bread production: Bake sourdough loaves and shape baguettes with consistent quality
- Case preparation:
- Fill pastry case ensuring perfect presentation before 8am opening
- Keep case stocked throughout the day, make more donuts & twice bakes as needed
Closing Baker Duties
- Prep for tomorrow: Load cold proofer with croissants, tarts, and donuts
- Inventory management:
- Consolidate, wrap, and date traditional croissants for twice-baked service
- Wrap and date all breads, store in freezer
- Collect kitchen order list and prepare vendor orders (Chef's Warehouse, Baldor, Sysco - Mondays only)
- Starter maintenance: Feed sourdough starter for next day's mix
- Deep cleaning: Sanitize sinks, scrape and sanitize work surfaces
- Workspace reset: Ensure everything is organized for morning shift, pull breads needed
All Baking Team Standards
Production Excellence
- Follow bake and prep schedules precisely
- Monitor proofing, baking, and finishing with consistency
- Know what's in ovens and proofer at all times - maintain awareness even if you didn't load it
- Track production schedule and ensure all components (fillings, glazes, doughs) are prepared
- Maintain ingredient inventory and update ordering lists
Preparation Duties
- Prepare donut and pastry fillings (crème pâtissière, chantilly, compotes, fruit curds)
- Mix large-batch doughs for next day (croissant dough, brioche dough)
- Measure and scale ingredients with precision according to written recipes
- Process delivery invoices throughout the day
Organization & Support
- Clean, organize, and maintain all food storage areas (dry goods, walk-in cooler, freezer)
- Assist FOH team with guest allergen questions and baking process inquiries
- Approach problems with solution-minded attitude
- Maintain clean, presentable workspace as a team
Cleaning & Maintenance
- Daily: Keep benches, tools, and shared spaces clean and organized
- Weekly: Deep clean mixers, ovens, and work areas according to schedule
- Ongoing: Keep storage areas neat and easily navigable

Duties
- Prepare and bake a variety of bread, pastries, cakes, and other baked goods according to established recipes and standards.
- Decorate cakes and pastries with attention to detail, utilizing various techniques to enhance presentation.
- Maintain cleanliness and organization in the kitchen area, adhering to food safety regulations.
- Assist in the packaging of baked goods for display and sale, ensuring products are presented attractively.
- Collaborate with the culinary team to develop new recipes and improve existing offerings based on customer feedback.
- Manage inventory of baking supplies and ingredients, placing orders as necessary to ensure adequate stock levels.
- Provide excellent customer service by engaging with customers, answering questions about products, and taking special orders when needed.
Requirements
- Proven experience in food preparation within a kitchen or restaurant environment is essential.
- Familiarity with food production processes and culinary best practices.
- Ability to work efficiently with kitchen tools, including knives and baking equipment.
- Excellent organizational skills with attention to detail in both baking and presentation.
- Strong communication skills to effectively interact with team members and customers.
